This is a fixed combination of three or more delicate herbs, used to flavour certain dishes. The herbs, as used in French cookery, are usually parsley, tarragon, chervil and chives. Other herbs may be called for in particular recipes.
The most common use of fines herbes is in omelettes, but they may be called for in many other dishes. In older blogs, fines herbes may also mean a mixture of chopped mushrooms and shallots, also called duxelles.
